Watermelons are diverse, with over 1200 known varieties. The seeds may be red, white, black, pink, spotted or brown. Their thick, hard rinds range from pale to dark green and may be solid in colour or striped. Large and round or oblong, the juicy flesh also varies from pink to deep red, affecting a Watermelon's sweetness. Often the deeper colored the flesh, the sweeter the taste. Watermelon's flesh contains about 6% sugar and it is comprised primarily of water.

Juicy watermelon is 92% water, so it’s a simple way to help stay hydrated. Unlike many other desserts, it’s fat-free, cholesterol free, and has no sodium. Plus, the water in it will help you stay fuller longer. To make an easy sorbet, puree some watermelon in your blender, add a squeeze of lime, and pop in the freezer until it hardens.

The cheery red colour comes from lycopene, an antioxidant. Watermelon has more of this nutrient than any other fruit or vegetable. 

Watermelon is rich in an amino acid called citrulline that may help move blood through your body and can lower your blood pressure.
