Rasam powder is an aromatic spice blend that is used
to make Rasam – a tangy spiced soup like drink from the South Indian
cuisine.
Rasam powder is
a traditional South Indian spice mix made with roasted lentils, whole spices
and fresh herbs. Just like Garam Masala adds flavour to vegetable
gravies and stews, rasam powder adds flavour and the key ingredient to make Tomato
Rasam or Pepper Rasam.
Adding a rasam powder brings in more depths of flavor
and taste to the rasam.
A basic rasam powder
is made with five ingredients comprising of four spices and one lentil.
Coriander seeds - Coriander
seeds is one of the major ingredient in rasam podi and gives warm, earthy,
robust tones.
Cumin seeds - On
roasting, cumin seeds gives warm and mildly bitter tones.
Black peppercorns - Gives
pungency and sharpness to the spice mix.
Dry red chilies - Red
chillies not only give color, but also lend some heat and spice to the ground
blend.
Tur dal - Give
a nutty flavor.
Aachi provides a Rasam Powder which
can be added to prepare delicious Rasam. Just Heat oil in a kadai, add mustard
seeds, urad dhal, dried red chillies, curry leaves, sliced tomato and saute. Then
add 20g rasam powder. Mix well. Add one litre water and allow it to cook for some
time. Then prepare 1 litre of tamarind juice and keep it aside. Then add salt.
Check for the seasoning. Top with chopped coriander leaves. Remove from heat
before it starts boiling.
